Coconut Almond Energy Balls are one of my favorite go-to energy snacks. They are a great way to get a raw, no-bake boost of energy and nutrients. Almonds are a popular protein-packed snack with nutrients like zinc, iron, potassium and vitamin E, which protect the cells from damage. Activated almonds are raw almonds that have been soaked in warm water and salt for 6 to 12 hours in order for the nut to begin to germinate (i.e., start to grow). It is then easy to peel the skins and eat raw or use in recipes like this one.
Coconut may help promote blood sugar control, contains powerful antioxidants and also has antibacterial effects. Dates are nutritious fruits that are rich in health-protective antioxidants and help support brain, digestive, and heart health. One note of caution: people with pollen allergies may have sensitivities to dates. Symptoms to beware of include: itchy mouth, scratchy throat, as well as swollen lips, mouth, tongue, and throat. Consult a healthcare provider to perform tests to check whether dates are causing your symptoms.
COCONUT ALMOND ENERGY BALLS
Ingredients: (16 balls)
1 1/2 cup “activated” almonds
1 cup medjool or deglet nour dates, pitted and packed
1/2 cup shredded unsweetened coconut
1 teaspoon vanilla extract
1/4 teaspoon coarse sea salt
INSTRUCTIONS:

- Remove pits from the dates.
- Add almonds, coconut, dates, vanilla extract, and salt to a food processor or immersion blender. Mix all ingredients.
- Scoop the dough and use clean hands to roll into 1-inch balls.
- Store in airtight container in the refrigerator (if there are any left!).
