PINEAPPLE GINGER JUICE

Pineapple Ginger Smoothie

Vegan, Gluten-Free, AIP

PINEAPPLE GINGER JUICE is one of my favorite anti-inflammatory cocktails.  You can juice it or simply put it in a blender.  By adding a frozen banana, you can turn it into a delicious, healing smoothie. The pineapple is loaded with nutrients and beneficial compounds, such as vitamin C, manganese, and enzymes (e.g., bromelain) which aid digestion, reduce inflammation and improve immunity.  It may even reduce cancer risk by minimizing oxidative stress. Ginger is also anti-inflammatory and improves digestion and immunity – so you are getting a double dose of power.

The pineapple should smell fresh and sweet, and firm and heavy for its size. Note that consuming large quantities of pineapple juice may not be good if you suffer from heartburn or GERD. Also, pineapple juice contains high levels of sugar and low fiber so drink moderate quantities – particularly if you are watching your sugar levels. 

PINEAPPLE GINGER JUICE

Ingredients:

¼ inch slice of ginger
½ pineapple
frozen banana (optional, if you want a smoothie)

Instructions 

USING A JUICER:

  1. Prepare the pineapple by peeling and cutting it into pieces small enough to fit your juicer chute. I chop the pineapple by first slicing off the bottom and top, and then slicing off strips of the peel (with the pineapple upright).  Then, I use a smaller paring knife to remove the remaining “eye” bits. 
  2. Clean the ginger. You can also peel it, though it isn’t necessary when using a juicer.
  3. Feed the ginger through your juicer and then the pineapple.
  4. You can save the pulp to add to smoothies or other recipes. Enjoy!

USING A BLENDER: 

  1. Prepare the pineapple and ginger as above.
  2. Add chunks of pineapple and the ginger to a high-speed blender and blend into a relatively smooth mixture. 
  3. If you want it smoother then strain the mixture (through a nut bag or strainer) or add a little water when blending.
  4. A a frozen banana if you want to turn it into a smoothie and boost your potassium intake.
